Quick and Easy Soup

There is nothing better than a bowl of hot soup when it is cold outside and baby it has been cold here. Many are bracing for winter storm Jonas this weekend and some are already experiencing it and I hope everyone stays safe and warm. We may get some ice and snow, too from it. For now it's just rain.

I don't know about y'all but I normally look on pinterest to find new recipes. I do have cookbooks, but they are just collecting dust.

I thought occasionally I would try out recipes on pinterest and share them with y'all if they pass the test. That would be the Mr. Savvy test.


Today I'm sharing this easy and quick Tuscan Bean Soup that is chock full of vegetables. I actually forgot some of the other ingredients in this shot. 

Here are the other veggies. I love to just set my laptop on the counter and start doing the prep work.
Last weekend my daughter made Julia Child's recipe Beef Bourguignon and invited us over. Now that is a lot of work and I won't be making it so I'm glad she made it and it was yummy.

This is Oskar my tiny food processor used mostly for chopping. I have had this forever. I don't think they even make this anymore, but should.

 I just checked and there is one listed as "vintage" on Amazon and they want $52 for it. I think that is a bit much for an old small electric appliance. 

I chopped the rest of the veggies myself. There is something therapeutic about chopping especially if you just had an argument with a certain person....just kidding.

Beans get drained.

Can you smell it?

Top with some parmesan cheese and dig in.

Oh, and what is the Mr. Savvy test?
 If he picks at his food and curls up his lip then I know he doesn't like it even though he will say he does.

  1. Sounds good! We had Italian Wedding soup last night. It was perfect for the cold weather. We have a little ice on the trees right now, but the roads are just wet. I hope the ice stops. We are also suppose to hav about 4 inches of snow by the end of this storm. Stay warm!

    I actually agree, chopping veggies is very therapeutic! Oh and there's nothing to make you feel your age like something you remember buying or being gifted being listed as "vintage!" LOL

  4. OMG an Oskar! I got one as a bridal shower gift in 1985. You are right they don't make them any more. Your soup looks delish!

  7. I'm another who finds chopping relaxing. I do mine by hand.

    We had chicken corn chowder earlier this week and will have chili sometime this weekend.

    The best is a mounted holder for a tablet or ipad!

  14. Love soup, and I put small meatballs in my veggie soup, also potatoes, a complete meal!! The storm will pass us by, however we are getting lake effect snow from Erie and Ontario.....it is winter after all!! Stay safe!!!

  15. Wow, Kim, I used my Oskar yesterday to chop celery for soup! Mine was bought at a yard sale for $10 at least 30 years ago and still works fine.

  16. That looks so good on a cold day like today. I always forget to check Pinterest for recipes. That was a good idea as long as it was created by someone that is an actual chef. I've often found some recipes that do poorly because someone concocted it in their kitchen some random Saturday and then published it. Ha!

  18. I love my Oskar. I believe I received it as a gift in the late 80's from a neighbor to thank me for babysitting. I have tried to replace it with a black mini chopper from various companies (because it is rather stained and doesn't match my kitchen). I have never found one that works as well as the Oskar. If anything ever happens to it, I might consider a vintage one for $50! I have probably spent more than that on various disappointing models I have donated to Goodwill.

  19. Hmmmm, yum yum!! It sounds delish!! I'm definitely going to make it! I made Clam Chowder today. Definetely soup weather, we got about 8 inches of snow so far and its still going!!
