ReplyDeleteI make a kind of savory veggie muffin like the recipe you give. I use oatmeal and whole wheat for maximum nutrition. The veggies (zucchini, carrots, beets, whatever--I change them around) keep the muffins nice and moist. I make a huge batch and freeze them, and pop a couple in the microwave for breakfast or lunch. I put the recipe on my blog...
